INTRODUCING THE COURSE

HEALTHY VEGAN BAKING

Plant-based, natural and nutritive ingredients combined with traditional techniques to create the pastry of the future.

1. WELCOME


Learn everything you need to navigate our platform: a video tutorial, how the course works; and practical information, such as icon legends, a glossary, and food allergies and sensitivities you should keep in mind.

2. BEFORE YOU BEGIN


General tips for a successful experience in the kitchen, ways to reduce food waste, and the fundamental factors that play a key role in your desserts, such as flavor balance, pairings, and attractive platings and presentations.

3. INGREDIENTS & TECHNIQUES

Wholemeal flours, nuts and seeds, healthy oils and fats, natural sweeteners, egg replacements, leavening agents and all the essential ingredients as well as techniques for a healthier vegan pastry.

4. BASIC PREPARATIONS

Apart from the basic preparations you’ll need before jumping into more complex recipes, in this module we teach you how to make a delicate vegan Ricotta and Dulce de Leche, which will be used in certain other recipes in the course.

5. COOKIES & SNACKS

Start preheating your oven! We’ll bake simple yet delicious treats such as nut-free Granola Bars, Lemon Biscuits filled with Dulce de Leche, old-fashioned Rhubarb & Raspberry Crumble Squares or the crispiest Tahini-and-Maple Cookies. All gluten-free, all perfect to enjoy with your cup of coffee or as a takeaway snack. 

6. TEA CAKES & QUICK BREADS

Throughout this module, you will learn how to use different types of gluten-free flours and egg replacements, such as flax seeds, fruit purées, roasted vegetables, or “magical” aquafaba, while you practice with such delicious recipes as a light Lemon-and-olive-oil Tea Cake, tender Pumpkin Muffins or a perfectly moist gluten-free Banana Bread, among others!

7. CAKES & OTHER BAKED DESSERTS

Time to dive into more elaborate and complex baked treats. Learn how to make a fluffy Polenta & Orange Cake, a rustic margarine-free Fruit Galette or a versatile Upside-down Cake. You will also learn how to make Lore’s famous Tiramisu 2.0, using whipped aquafaba to make a moist, gluten-free sponge cake and the fluffiest “mascarpone” cream.

8. FINAL PROJECT

Now put your new skills to the test and create your own baked dessert masterpiece! If you have successfully completed all the assignments, you will be awarded the Aurea certificate.

There is something a bit magical about making a perfectly fluffy and airy gluten-free cake from scratch without using processed ingredients. Behind the magic, there is the proper technique to whip aquafaba to stiff peaks.

Extra-virgin olive oil, freshly squeezed orange juice or grated ginger are just some of the nutritious ingredients that make this cake the best companion for your afternoon tea. The “icing” on the cake? A big portion of fresh almond ricotta!

 

TIRAMISU 2.0

This version gets so close to the flavor and texture of the famous original Italian dessert that no one will ever suspect that it contains no gluten, no dairy, and no eggs. Made with biscuits of tender gluten-free sponge cake soaked in espresso and sweet wine, and a velvety, light-as-air vegan mascarpone cream, the result is a delightful and refined dessert that is very hard to resist.

PUMPKIN DOUGHNUTS

Other than their round shape, these doughnuts have little to do with traditional examples. That’s because they are neither fried nor yeasted. These baked, gluten-free doughnuts are made from roasted fresh pumpkin which, in addition to providing a good dose of nutrients, contributes to a super-fluffy, tender texture.

Spiced with cinnamon, nutmeg, ginger, clove, and cardamom, these doughnuts are packed with flavor. And they are sure to elicit a “wow” from anyone who sees them!

Questions you might be considering

Who is this course for?

We first created this course for anyone wanting to learn the foundations of a healthier approach to vegan baking. During the last year we've had amateur chefs, entrepreneurs wanting to open their own businesses, or even professionals looking to complement their skills. If you love pastry but are looking for a more natural approach, you'll get a lot of value out of the course, specially if you're starting out or have some basic knowledge.

How much access will I have to the course?

You will have for the first time in this course, 1 full year of access to our platform, where you will have access not just the content itself, recipes, videos and materials, but also to the interaction with your instructor.

Do I need to get many tools or new equipment?

If you are currently baking at home or your business, it’s unlikely you’ll have to get anything new. From all the tools we suggest, a huge number are optional and can be just useful to you. With a high-speed blender, a normal food processor and a few measuring cups and cake molds you can take this course without any problem.

Do you offer a certificate of graduation at the end of the course?

In order to get our certificate, you have to submit the assignments we suggest (essentially replicating the recipes and a final project), and have them approved by your instructor before the year of access expires. But here’s the thing: you’re not obliged to. You can take the course, do all the work and get our certificate, but you can also do your recipes without sending them, and basically taking the course at your own pace based on what you’re interested to learn in no particular order. You’ll still be able to reach out to us and ask away about whatever you want, and we’ll be here for you regardless.

What if I have no previous experience baking?

The course is designed to cover all the basics, so we don’t take anything for granted or understood. If you've never baked before, or you’ve done some traditional baking but none vegan, you’ll find the natural pace of the course perfect. If you have previous experience, you will be able to skip some bits and move through the first parts of the course easier, although we don’t recommend doing so because it’s an opportunity to consolidate the foundation of your knowledge and to find blind spots.

Who is this course not really for?

If you are looking for a course to add a few recipes to your repertoire, this is not the best course for you. There are more than 15 different recipes, but we use them as vehicles to teach about ingredients, techniques, textures, how to build a recipe from the ground up, etc. The value of the course is much more than the recipes, that are totally interchangeable.

Also, if you are looking for a magic 1+1=2 type of formula to do vegan baking, or a course that’s going to name 3 ingredients to "veganize" recipes, this is probably not your best option.

What if there are ingredients I can’t find?

After having hundreds of students from all over the world, we know sometimes there might be ingredients that will be difficult for you to get, or that even you won’t be able to find where you live. When we say this course is about you and your growth and not the recipes or the ingredients, we actually really mean it. We will go above and beyond to suggest alternatives and to modify recipes without altering their role on the course, so you can still make them with the ingredients available to you.

Do you offer a payment plan?

We actually do! You can choose to pay the course upfront or in 4 installments.

What type of feedback will I get? Do you guys answer emails once a month or do general calls answering the most important questions?

This course is designed on a personal basis. You get to ask your own questions and have them answered by your instructor on a one to one conversation within our platform, as well as receive specific and personal feedback on the assignments you submit.


How much time it can take me to get through the course?

Although you have 1 year of access to the course, it can be done in less than a month depending on your availability. If 2020 has taught us something is that this depends on you entirely. You could be done in 3 weeks, or having to work on 1 recipe per month: you will have flexibility to choose based on your schedule and our availability when you are able to show up.
